Growing up in Massachusetts I always thought I had seasonal depression. I always thought it was because the days were dark, dreary, and snowy. But turns out...in North Carolina I have the same problem. And what's even stranger, it's been gorgeous out! I'm talking....80 degrees and humid this past week. There's just nothing to do. Our weekends are spent at home instead of out exploring our gorgeous state.

My blog goes downhill from November to March. We don't travel (we haven't left North Carolina together since September!) there's not a lot to report on, and my stories seem so boring. From April to October it seems like we travel so much, I take so many pictures, and can't stop talking about all the fun stuff we do!

So, even though it hasn't been very wintery, I'm so glad this winter is almost over. Our calendar is jammed packed, just the way I like it. I can't wait to get out of this weird funk I have been in. I can't wait to start blogging about fun stuff...and not just updating you on our boring winter lives.

The bread I made was fabulous! I'm not gonna lie...it only lasted two days. I'm now out of bread, butter and jam. Oops!

Need a good laugh? Danny downloaded a voice changer on his phone and recorded a dumb conversation. It's nothing amazing but it makes me laugh every time!

Bread.

You know what totally creeps me out? The bread aisle! First, bread is expensive. Second, I'm convinced store bread never goes bad. Lately we've been living by the rule "if it doesn't go bad, then it's not good for you." So....store bought bread is out of the question! (We don't 100% live by this rule...baby steps!)

So, in order to pinch some pennies and still eat delicious carbs....I started making my own bread. From scratch. By hand (maybe with a little help of my handy mixer!) It's easy, it's delicious....and really, there is nothing better than the smell of fresh baked bread!

The first bread I made was pita bread. Four ingredients and less than an hour to make. It doesn't get much simpler than this! The pita bread lasts about 2 days, longer if you freeze it.

1 Tbsp yeast

1 1/4 cup warm water

1 tsp salt

3 - 3 1/2 cups flour

Dissolve yeast in water for 5 minutes in a bowl of electric mixer. Add salt and 1 1/2 cups of flour. Using the dough hook, beat. Add additional flour. When all flour is incorporated kneed for 5 minutes.

Turn dough onto a floured surface. Divide into even portions (the recipe makes about 10 good sized pitas.) Form dough into balls, then flatten with rolling pin into 1/4 inch discs. Make them as thin as possible, if not the middle will be way too doughy!

Let rest on floured surface for 40 minutes.

Preheat over to 425. Put discs, floured side up, on baking sheet. Bake 10-12 minutes until golden brown.

Next up is a delicious loaf of white bread. At the store I don't buy white bread...but for my first time baking bread I wanted to keep it simple. This bread is a long process but so worth it.

1/4 cup skim milk

5 tsp sugar

1 tsp salt

5 tsp melted butter

1 package yeast

3 - 3 1/2 cups flour

Nonstick cooking spray

Mix the yeast according to package directions in bowl of electric mixer. Add the milk, sugar, salt, and butter to the yeast mixture, mix until well combined. Then add 2 cups of flour, using the hook attachment, beat. When flour is incorporated add remaining flour until incorporated. Beat with hook for about 5 minutes. It shouldn't stick to the sides of the bowl!

Flour your surface and turn ball onto the counter. Shape into a ball. Spray bowl with nonstick cooking spray and put dough back in it. Cover with a cloth and set in a warm place for one hour.

After an hour punch down the dough and turn onto your floured surface. Roll the dough out with a rolling pin and then roll the dough, like a jellyroll. It should be the same length as your bread pan. Put the dough in a greased bread pan and cover with a cloth. Set in a warm place for another hour.

Preheat oven to 400. Bake bread for 30 minutes. When it done, take it out of the pan immediately. slice, smother in butter and jam....Enjoy.

1. My new favorite website is SkinnyTaste.com. I've been cooking up lots of yummy things! I want to make everything on this site, it all looks so good!


1) Salisbury steak and skinny garlic mashed potatoes. 2) Jamaican brown stew with red beans and rice

2) Wanna know how I know we're getting old? Saturday night the puppies played, the guys played poker, the girls watched movies....and Sunday the 3 of us napped on the couch all day. By the way, we were home before midnight!

3. My blog used to be full of Miley stories. It's been awhile, which is a sign that she's been behaving. But she's been fooling us all. The other day she opened the cabinet and ate a box of treats. She's too smart for her own good!

4. I'm about to give up on house hunting. Maybe if I give up something will just fall at our feet. We've lowered our expectations...a fence is no longer necessary. We are looking at these tonight...

5. And I don't know about you. But this is a pretty crappy way to start your week!

A Walk Down Memory Lane: College!

When I asked what people wanted me to blog about, I got a lot of great ideas. One of my favorites was from Molly of O hushed October morning mild. Molly wants to know about my college experience. I feel like I just graduated...but in reality, it's been almost four years since I was handed my diploma!

I hope everyone is ready for a walk down memory lane! This is going to long...but fun. I promise!

I went to Fitchburg State College. I lived on campus. Going into my Freshman year, I got the letter that told me who my roommates would be. I was so nervous, my roommates (Gina and Ashley) were from the same town. I just knew I would be third wheel. Turns out, all the letters were wrong...each letter said the two roommates were from the same town. So, I lucked out! Or....so I thought.

I feel like the first semester of Freshman year lasted a lifetime. Gina was a good friend, then made me cry a lot. I had pneumonia and bronchitis at the same time....and didn't miss a day of classes. Then, me and Ashley became best buddies. We almost got kicked out of school together (true story) because we drank way too much whiskey. All I remember from that night was a guy they called Sarj. being mad at me...and a guy we called Burger handing me a gallon of water, while I was hanging over a toilet.

Second semester brought a lot of changes. I changed my major from Elementary Education to undeclared. Me and Ashley (Roomie from now on) moved out of the triple and into a different dorm, that we stayed in until senior year. I got my first tattoo, celebrated my first Spree day (last day of classes,) went to my first house party and club. And right before summer break, broke up with my boyfriend of four years.

Highlights from summer 2005: the girls going to Maine for the first time and my first roadtrip to Wilmington, NC. Which was also my first time being an extra on One Tree Hill.

Sophomore year at FSC I finally decided on a major - History. Sophomore year (according to my LiveJournal) was kind of a bust. I don't remember much from this year, which is weird because I also don't remember anything from Sophomore year of high school...

Highlights of summer 2006: I decided to start Slim Fast (and eventually lost 60lbs!) Visited Chapel Hill and Wilmington for the second time!

First semester if Junior year was eventful: I loved my classes and did fabulous....even in my Speech class that I hated! I spent Thanksgiving traveling Ireland with two friends. And I turned 21!

Second semester was when I really started to love college life! I took my favorite class: Food Culture. I went to St. Thomas for spring break...and a few weeks later I roadtripped back down to Wilmington for a weekend of Tar Heel basketball and One Tree Hill. I had my first drunken night at my favorite bar, celebrated Earth Day...and the best Spree Day ever! We drank one drink every hour....

Highlights of summer 2007: My friends went to Italy and I stayed home to work (what the hell was I thinking?!) I took an online History of the Movies class. And once again we roadtripped to Wilmington: can you tell we were obsessed with One Tree Hill?

If I could relive one entire year of my life, it would be senior year of college. My classes were hard, but I love all of them. My schedule was perfect, no classes on Monday OR Friday. I lived in a townhouse with my three best friends. I spent every Friday in the city at my favorite bar with great friends listening to awesome music. We celebrated our last Chrismukkah as college students.

Second semester of senior year was just as amazing. My roommates were in all my classes, sometimes we skipped....just to go to Target or out to eat. I went to Aruba with my family and I spent spring break in Myrtle Beach with my roommates!

The last few weeks of college were EPIC: we roadtripped to New Jersey for Sonic and Joe's Crab Shack, great Spree Day, and awesome "last night out" at my favorite bar.

On May 17, 2008 I graduated with a BS in History. It was a gorgeous day, Bert from Life is Good was our guest speaker, everyone was happy. Looking back, even though I traveled to North Carolina alot, I never pictured myself living here. My plan was to go back to school. Even with my degree I had no idea what I wanted to do with it...I still don't know.

I feel like I talk about college like it was yesterday. It was four years ago that we graduated. Ashley and Veronica are still my best friends. It's amazing how much..and how little...has changed since we have graduated!

Date night plans fell through over the weekend: The Vow was sold out! So, we did the next best thing....bought a few movies, ate Cookout milkshakes and cuddled on the couch. It was outstanding!

It's refreshing to know that we can get a loan for our house. That's one less thing to worry about. Now we just have to find our dream home!

One of the most cheerful parts of my day is calling home. Yep, I do it everyday. Sometimes more than once!

The house buying process is proving to be a memorable one. We're headed out to look at more homes tonight. Cross your fingers we fall in love with something!

My Hubby is so cool - he gave me a night off from cooking and came home with Chinese food. YUM!

Dreams Crushed

I'm sure you remember my big announcement that we decided to buy a house. We even made an offer and it was accepted. And we've been sitting around waiting and waiting since December. We were under the impression that our mortgage guy was working with the credit repair person because he knew we could afford our dream house.

Well, turns out in January the mortgage guy left the real estate agency to open his own place. He was still working with us but failed to mention the big change. Danny's credit score has gone up and items have been deleted off the report. We thought things were looking good! Until Thursday we had to write a letter to the underwriters and have a meeting with the mortgage guy. His parting words were "I promise I'll help you buy a house....I just can't promise when."

Um....what? What the hell have we been waiting for? We made an offer, it was accepted and we paid $500 earnest money! I even redid my table to match our new kitchen! He told us he would get back to us Monday.

Friday morning my realtor sent me an e-mail. Before I told her about our crappy meeting she said "let's meet with a different lender, [he] might not be our best option now." So, Friday we met with a lender. Who pulled a credit report, ran the numbers and told us we were approved for a loan.

Before you start congratulating us....read on.

Our dream house plans included a VA loan. But because there are still certain things on Danny's credit report, we had to opt for a FHA loan. With that loan, unless you put 20% down, you have to pay mortgage insurance. With that....our house went out the window. We can technically afford the house, we would just never be able to leave because we'd be broke. And I refuse to be house poor.

I was mad. I was upset. We've been strung along so long that we were unable to get our earnest money back. If our original mortgage guy ran the numbers first we wouldn't be in this position. And we'd have an extra $500 in our savings account.

Luckily, our new lender told us what our new price range has to be including the FHA fees. I've been digging through MLS lists all weekend trying to find our new dream house. Saturday me and Danny drove around being disappointed with all the houses. Yesterday our realtor took us out to see a few houses.

We saw this new construction. Screened in porch, fenced in yard, awesome kitchen, awesome light fixtures. It's just so far away from everything. But it is on the same road as a great winery!

Then we saw two older houses. The first one had a great yard, looks nice from the outside, hardwood floors....but it's so hard to see past the paint that is already there. I need a blank slate to imagine my house. And the kitchen isn't too big. The second house....a big fat no. Offers nothing that we want.

The next house we saw was another new construction. It was tiny, had a weird yard (and on wetlands) and the strangest backdoor I have ever seen. But it did have a nice kitchen! It was also pretty far away from everything.

The last house we saw was pretty laughable. There were bars on the windows, a scary room with a wood burner...and it was probably haunted. I wish I had a picture of it!

So, we're back at square one. With less time than before to figure everything out. Ugh.

My Wine List

I talk a lot about wine and wineries, but I've never given you a list of my favorite wines. So, at the request of Mrs. Lawler from Mrs. Lawler's Lovelies, I'm going to share a few of my favorites!

If you like Riesling and haven't tried Relax...what are you waiting for? The website says it's drier than a traditional traditional Riesling, but I actually think it's sweet (not as sweet as the North Caroline wines though!) It's perfect for any occasion - dinner, dessert, or just relaxing. And with a price tag of about only $11, it's a guilt free treat! My favorite way to enjoy it is with a a crisp summer salad. Seriously, try it...amazing.

Another favorite is the lesser known Relax Cool Red. I discovered this wine at WineRiot, and have YET to find it in a store. So, if you find it in stores...please send me a bottle! This red wine is a little different...it's meant to be served cool. I think it's the perfect gate way wine to real reds.

I really like local wines. My favorite North Carolina winery is Duplin Winery. If you like sweet wine, try a muscadine wine. It's not for everyone (I wasn't a fan at first!) but it really starts to grow on you. If you are like me, and like cold drinks, this is the wine for you! I have a hard time choosing a favorite. Carlos is the driest, so start there if you are unsure. My favorite is Pink Magnolia. If you also have a hard time choosing a favorite, I 110% recommend joining the Heritage Club.

Red wine is not my favorite. I can't get past the dryness of it. I also have a problem with oak-y wine. BUT if I had to choose Olive Garden's Principato Rosso is really good. It's much "heavier" than the other wines I like...it's perfect with a hearty meal.

Truth be told? I like a lot of different wines. I don't like oaked wines or anything too dry. I'll try anything once (or twice...) though!

How's it Going?

I'm sure you might be wondering how my driving has been going?

I can't even sum it up in a word. It's more of a noise. Eh.

I'm not bad. I have all the basics down. Straight, turn, stop, obey laws, follow traffic, parking sometimes. The new hurdle? Changing lanes. I don't know if it's because I'm so short, but I can not see a damn thing. Yes, I look in the mirrors, I see....stuff. But I don't trust myself 100% to get myself into the other lane safely. I turn around to do a quick look...I don't see anything.

Here's where the problem comes in. I ask Danny, "can I get over?" He refuses to answer. Then, he gets mad that I'm not confident in my driving. Well, how am I supposed to work on the confidence issue if the person trying to help me isn't that big of a confidence booster?

So, this is why driving is only an "eh." I'd rather not constantly bicker with my husband, so driving constantly gets pushed on the back burner.

You know the saying "those who can't do, teach?" Well, I can't drive, but I can give damn good directions and know the laws. And I think the same goes for Danny...he can't teach, so he drives.

Sadly, this is only going to get us so far. I want my license around the same time that we move. I want a job. So, I need to buckle down....cuz moving day is going to be sooner than later!

I'm blessed to have food in my belly, a roof over my head, an amazing husband and a puppy who gets excited whenever I walk in the room. I really am a lucky girl.

I'm delighted to say Miley is a big girl now! She hasn't been in a cage in over a week and hasn't destroyed anything! I'm a proud puppy mama!

I feel like I say this every week - but we are making steps to be in our new home! We've been in touch with our mortgage adviser every day this week. I'm joyous that we're almost there....but still a little nervous that things might not work out for us.

Last week me and Hubby went to cycle class. It was a disaster. BUT it was such a great workout that we are returning tonight! I'll pretend to be cheerful!

It's almost the weekend....and that makes me jolly!

Valentine's Day with my Hubby!

This was our third Valentine's Day together. And it seems like we are going backwards! Usually, couples who are dating are the ones who make a big deal out of the day. And "old married folks" do something smaller. Well, I'm all about breaking the mold! Our first Valentines Day was spent at CiCis, last year we celebrated at Artist Point in Disney. And this year - a seven course meal.

Before we even left the house, we had a plan. Each course had two choices. We decided we would order both, so we could try everything the menu had to offer! I'm usually not a meal-sharer....but I make special exceptions for big fancy meals!

I'm sure your dying to know what we had. Let me break it down for you! Sorry for the crappy cell phone pictures, I realized I forgot my camera when it was too late to turn around!

Two of My Favorite Things!

What are two things that girls love?

If you guessed wine and chocolate - you are right!

I recently found out about Dove Chocolate Discoveries and knew that it would make a great girls night out. When my chocolatier told me I could do a wine and chocolate night....I was all over that! I rounded up all the girls, had them bring some wine, and enjoyed a fun night in!

We tried a ton of delicious chocolates. White, milk and dark. Chocolate covered blueberries, cappuccino balls, chai dip. Chocolate BBQ sauce, chocolate vinaigrette. So so many delicious treats!

And then there was the wine. Whites, reds, blush, sparkling. You name it, we had it....and now the bottles are empty!

It was such a fun night with the girls! I can not wait for our next get together!

Murder Mystery

Once a week me and Hubby have a date night. Usually it's dinner, but every once in a while we luck out and find something different to do. I'm constantly on the MCCS websites looking for good cheap fun. And sometimes...I find something that we are really interested in!

Friday night me and Hubby went to the prom! Well, not quite. It was the 1959 Tarawa Prom....murder mystery style! And it really was 1959 prices....$7 for dinner and a show, and free prom pictures. With those prices, you really can't go wrong!

In true Nicole and Danny style, we arrived early. But it turns out, that's when the show really started. The actors were in the bathrooms singing and getting ready for their prom. It made the whole experience seem so real. When it was time for the show, we went to our seats, got some punch and read the directions on how the show would work. We had to work with our tablemates (who were really nice!) use the clues and figure out what the heck was going on!

The show was fun. I thought for sure my table knew figured out the mystery....but turns out we were wrong! We enjoyed a great meal, made some new friends, and had another awesome date night!

My "Must Do" Disney List!

A year ago today me and Danny set out on a week long adventure to my favorite place - Disney World! We were celebrating our honeymoon (a little late,) anniversary (a little early,) and our first real vacation together!

Just in time for me to reminisce Dani from My Heart is in the Army, My Brain is in Grad School asked for my Must Do Disney List! So, here's my Top 10 list...in no particular order!

One. Stay on the Resort

I've done Disney "on the cheap" many times...but the best way to have the Disney experience is to never leave Disney! You literally eat, sleep and do Disney all day, every day. There are perks to staying on the resort - great deals on meal plans, activities at your resort, extra hours at the parks...and a lot more. Last year we stayed at All Star Music, it's one of the cheaper hotels...but it has all the same Disney perks!

Two. The Boardwalk
Disney is a busy place. If you need a quieter night while on vacation The Boardwalk is an awesome place. You can walk around the water, relax, watch performers, and eat awesome food. My recommendation: Cat Cora's Kouzzina. There are bars and clubs at the Boardwalk too, I think they are a little overpriced. Skip them and just enjoy the atmosphere at the Boardwalk!

Three. Character Breakfast
Yes, I'm 26....and yes, I just recommended a character breakfast. Here's my reason: it's delicious. My favorite is Winnie the Pooh and Friends at the Crystal Palace at Magic Kingdom. All you can eat, delicious food (my favorite is the bread pudding!) and you can take some pretty goofy pictures with the characters!

Four. Epcot
Hands down Epcot is my favorite park. And I always seem to do the park in the same order - Spaceship Earth first, then everything to the left (minus Mission: Space!), everything to the right (I miss Honey, I Shrunk the Audience!) and then....drinking around the world. Start in Mexico, get dinner at Marrakesh in Morroco, and then finish up the night with a Beatles tribute band and fireworks! That right there....my perfect day!

Five. Dinosaur

All the rides and attractions at Animal Kingdom are awesome. But the one ride that always sticks out in my mind is Dinosaur. I've never actually been scared on a ride until I went on this ride. I'll let the picture do the talking...

Six. Hollywood Studios

It's really hard for me to call it Hollywood Studios...it will always be MGM to me! My favorite rides are Toy Story Mania, Rockin' Rollercoaster, and Tower of Terror. Everything is fun, but not awesome. I will say, the American Idol show is pretty cool. You see people perform, they are judged...and each day one person is chosen to go to Hollywood for auditions!

Seven. Magic Kingdom
The Magic Kingdom IS Disney - all the classic rides and dreams coming true. Even though it's annoying you have to ride It's a Small World. You can't miss Haunted Mansion (even though I was petrified as a kid!) or Pirates of the Carribean. As an adult, my favorite is Hall of Presidents. Don't forget to wear your Mickey ears!

Eight. Ride the Monorail

It's not really that exciting, but it's something you have to do while you are on vacation!

Nine. Try Something New
There are so many great restaurants on the Disney World Resort. Each hotel has a great restaurant and you can visit any of them...even if you're not staying at that hotel. The restaurants all feature specific cuisine, I'm sure they have something you have never tried! I recommend Artist Point, they have a lot of different meats. Not too adventures...but you can't get it everywhere!

Ten. Room Service by the Pool
This is technically something you could do anywhere...but in Disney it's even better. We had some left over food credits so we ordered a pizza, brought it to the pool...and watched Toy Story. Add a margarita and you have the perfect way to end vacation!

This is the most basic Top 10 Disney List. If you asked me to do a Top 10 List for each day or park...I'd be able to do that too! I love Disney!

Vacations make me joyful. We're in the beginning phases of our 2012 vacation planning!

Zumba makes me giddy! After a super long break, I went to a Zumba class Monday. So much fun and such a great workout. I always feel amazing after Zumba!

All the food I made this week had a ton of leftovers. I froze everything. I'm excited for the week that I won't have to go grocery shopping!

I'm thankful that me and the Hubby haven't killed each other during my driving lessons. You know...cuz that wouldn't be a good thing.

DIY: Part 2

I pin a lot of things on Pinterest. I've duplicated a bunch of the recipes, have a ton of ideas for our future home, and huge board full of potential DIYs. For instance, these chairs....

I love the pop of green! I just prayed that it matched our newer, darker, kitchen table.

We headed to Home Depot (by the way, I think these men and women deserve a raise, they are so knowledgeable and helpful!) picked out the perfect shade of green and got to work.

And man, oh man, I hated painting these things. Sunday morning me and Danny did the first coat. I hated it. The paint was streaky and I was so unsure about the color.

Monday morning rolls around, I'm alone...and responsible for 6 chairs. Each chair took 40 minutes of love and hard hard work.

I am not a football fan. And I'll be honest, I was a little excited when Danny was scheduled to go to Savannah....that's an automatic out for watching the game! But just like everything military related, plans changed, Savannah didn't happen....and I had to "watch" the football game.

To me, the best part of the game is not the actual game - I'm a fan of the commercials. And I don't care what anyone says, last nights halftime show was quite fabulous. She might have been lipsyncing, but if she wasn't...she would be getting crap for that too. You can never win, not everyone will be happy...but I thought everyone put on a great show.

During the actual game I could be found in the kitchen. During the first half I whipped up some baked jalapeno poppers, Rachael Ray style.

For the second half....chili. While everyone else was snacking on buffalo wings, we had buffalo chicken chili, also a Rachael Ray creation. This was amazing. It was like a giant bowl of delicious wings...with a side of bleu cheese. Delicious!

Stuffed Sweet Potato

Lately, we've been watching what we eat a little more closely. I've been trying to make meals that don't leave a ton of leftovers. The current issue of Food Network magazine had a ton of great options, but I can't always find "fancy" ingredients at Walmart. I'm left to improvise a lot....which always results in my own delicious version.

Stuffed Sweet Potato

1 sweet potato per person

Chorizo, chopped

One small bunch of kale, chopped

Salt

Portobello mushrooms, sliced

2 cloves garlic, grated

1/2 tsp red pepper flakes

1/2 cup part-skim ricotta

1 Tbsp grated Parmesan cheese

Nutmeg, to taste

1. Pierce each potato with a fork. Arrange on a microwave safe plate, and microwave for 12 minutes.

2. Meanwhile, cook chorizo in skillet until crisp. Remove to a paper towel lined plate. Add kale, season with salt and cook until it starts to wilt. Add mushrooms, garlic and red pepper flakes. Cook until vegetables are tender. Add chorizo back to pan.

3. Mix ricotta, Parmesan and nutmeg in a small bowl. Split open sweet potato, top with chorizo mixture, and then cheese mixture.

Enjoy!

For once, I'm joyful that plans have been changed: turns out Danny won't be going to Savannah for the DET. I'm not a football fan but I promised I'd watch the game with him (even if it is just for the yummy snacks!)

I'm so out of shape. But I'm excited to say I've been working out and eating right again. Summers right around the corner and I have lots of cute clothes to fit into!

I'm grateful that my Hubby is home every night. I love our nightly routine, tea and cuddles on the couch. It's the perfect way to end every day.

I really appreciate all the comments and love I got on my first DIY! I really love it, but I'm getting super nervous about doing the chairs!

I'm elated that our lease is almost up! Hopefully we'll be in the house soon and won't have to pay month-to-month here!

Orange Chicken Stir Fry

A few weeks ago I went to a Healthy Resolutions cooking class on base. After a two hour demonstration I went sent home with a few recipes and a new love for quinoa. When I was meal planning for this week, I knew I wanted this healthy stir fry on the menu.

Last night while Hubby and Miley were out for there three mile run, I got to work on this healthy dinner. If you are watching your weight, or just looking for a delicious meal, add this to your next menu!

Orange Chicken Stir-Fry

Quinoa:

2 cups chicken stock

2 Tbsp olive oil

1 orange, zested and juiced

1 cup quinoa

1/4 cup chopped chives

Chicken:

1 1/2 lbs boneless, skinless chicken breast, thinly sliced

Fresh black pepper

1 chile pepper, thinly sliced

1 inch piece ginger, minced

2 garlic cloves, minced

1 large red bell pepper, thinly sliced

1/2 yellow onion, sliced

1/3 cup hoisin sauce

1/3 cup orange marmalade

2 Tbsp low-sodium soy sauce

For the rice:

1) Bring 1 1/2 cups stock, 1 Tbsp oil, and orange zest to a boil.

2) Add quinoa, stir, and reduce heat to med-low, and cover.

3) Cook 15 minutes, and then stir in the orange juice and chives.

4) Turn off heat and fluff. Remove from heat and keep covered until ready to serve.

For the chicken:

1) Heat the remaining 1 Tbsp oil in a large skillet over high heat.

2) Add the chicken, season with black pepper. Brown evenly and then remove to a plate.

3) To the skillet add chile, ginger, garlic, onion and red bell pepper. Cook until veggies start to soften.

4) Return chicken to the pan.

5) Stir together hoisin, marmalade, soy sauce and remaining chicken stock in a small bowl.

6) Add to the pan and reduce over high heat for 2 minutes.

7) Serve the chicken over quinoa.

Absolutely delicious!

I can't believe today is the last day of January. I feel it was just yesterday I was opening the door to find my parents here, surprising me! To say "see ya later" to January 2012, I'm linking up with Just Peachy and sharing my favorite things of January!

1. Hot Chocolate

I used to be a coffee addict but after a month long headache...I gave it up. And (re)discovered hot chocolate. I suck at making coffee at home, but it's pretty hard to mess up hot chocolate! My real addiction is mint hot chocolate at Dunkin Donuts. Have you tried that deliciousness?

2. Garnier: The Brusher

My face goes through faces and generally likes to break out during that "time of the month." And I really think the milk in hot chocolate makes me break out too. But I've finally found a cure! Garnier The Brusher Gel Cleanser is perfect. The brush is gentle on my face and really get into my pores, it gets my face super clean...leaving it soft and acne free.

3. Instagram

I've been using Instagram for a while now, but I'm still addicted to it. Just like the blogs I've met some great girls through it...and even met one in person the other day! Oh, and I like posting and seeing everyone's pictures.

4. Krave

I don't know how long this cereal has been out, but I'm just discovering it. Little chocolate pillows, filled with chocolate...and after floating in milk for a while you're left with chocolate milk. I think Krave is the perfect name for this cereal. Has anyone seen the hazelnut filled version? I need to try it!

5. Unstoppables

Have you heard of these little guys? You put them in your washing machine and they keep your clothes smelling fabulous. They are a little expensive...but so worth it! Throw them in with your favorite blankets and you'll be keeping warm and smelling good!

My First DIY

This weekend me and Hubby decided to start purchasing things from our New House Wishlist. We set out to some furniture stores and thrift shops to find the perfect coffee table, bar stools or rocking chairs. We went to about five stores before I found the perfect coffee table. It was square, trunk style...and cheap. But here's where we made our mistake...we brought the car instead of the SUV. There's no way it would fit in the car. They also wouldn't hold the coffee table for us. So we had to leave! We weren't gone very long...but by the time we got back, my dream coffee table was GONE!

After that, every coffee table I saw was ugly, boring, and expensive. Even if I did like it, it would never be my dream table!

We decided to move on. We somehow ended up in the paint aisle at Home Depot. And the next thing I know we are DIY-ers! I knew I wanted to do something different with our dining room table, but I never dreamed we would actually do it. I'm not crafty, at all. And this is perfect timing, Kandice from We Aren't Scared of Sugar said I should do a DIY on my blog. Fate.

So, at 6:00 on Saturday night we were sanding down our dining room table. After that, there was no turning back.

We decided to stain the table to match the cabinets at the new house. We used English Chestnut. We did two coats Saturday night, this is how our table looked the next morning...

This wasn't dark enough for us...and we started brainstorming the next step. So, we headed back to Home Depot. The next step? Another coat of stain and black paint on the base of the table! After 24 hours this is what our table looked like!

It doesn't even look like the same table! And I'm really happy with how it came out! We still have to finish the chairs...and we have big plans for the chairs. This little project got me even more excited to move...and maybe tackle more DIY projects!

I'm happy that the latest Food Network magazine has a ton of low-cal options. Now I can make healthy meals for me and Hubby, instead of pretending to like salads!

My great grandmother has been crocheting again. I'm thrilled that she promised me one...even though promised two other people the same one!

Last night we thought we were going out for a quick second, so we left Miley out out of the cage. Two hours later we strolled in....and I am joyed to say she didn't destroy anything!

I'm ecstatic that we got a head start on our taxes. However, I hate hate hate doing taxes, I wish I never started Avon and I'm so happy that I never have to deal with that crap again.

Danny got another round of credit reports in the mail. It appears that it went from 11 pages to 1 pages. If I'm interpreting it right....man, I'm elated!

So, it's 2012. The year I have been fearing since I first learned about the Mayans. And I swear, news of the end of the world is following me. This weekend I went to my parents - a Popular Mechanics magazine was on the counter with the "twelve ways the world could end." A few hours later I was on a plane and the History Channel was highlighting the same information. And yesterday I logged into Yahoo only to find that there were solar flares on Sundays.

I don't think the world is going to end on December 21, like the Mayans predicted. But I do think something wacky is going on out there. This "winter" weather is crazy. New England has barely had any snow and I rarely need a jacket in North Carolina. The compete opposite of my last two years in North Carolina. And there have been tornadoes this month. Really? It's January!

Something isn't right.

People like to tell me that the Mayans just got tired and stopped working on the calendar. Or that pollution is just causing the change in the weather - to which I say, if pollution can do this...what else can it do? Also, I've heard people say that 2012 is just a "new beginning." Again, weather changes caused dinosaurs to die off....but it was also a new beginning.

I'm sure my fear is completely unreasonable. But if there's one thing you can't pick up on my blog - it's that I'm a pessimist, always fearing and expecting the worst.

7. A goal you want to finish before the year is done? Get my license. Finally.

Winter Wonderland Wedding

I love weddings. I love getting dressed up, the gorgeous bride, the handsome groom, the food, the music...the love. I love everything about weddings. And I even love traveling home for 48 hours (I once did 24!) to celebrate a wedding!

This weekend me and Dad spent the weekend in the Berkshires. Danny wasn't able to make it to the wedding, so I brought the next best person...my Dad!

The wedding weekend started with rehearsal and dinner. It was such a perfect, laid back dinner - pizza and beer. My Dad mingled, I chatted with the girls, and made some new friends. When the night was over, and lots of beer glasses were empty....we went back to the room. This hotel was super fancy - they turned down your blankets and leave chocolate chip cookies on your pillows. This might be the reason Veronica chose to get married here!

Saturday morning the bride and her maids were up early for hair appointments. And to everyone's surprise and the brides delight - it snowed overnight! Perfect for a winter wedding in the mountains!

By 10:00 the girls were dressed in our silver and aubergine. The brides mom was in aubergine with a silver flower, and the grooms mom was in silver with a aubergine flower. We all matched perfectly. It was gorgeous. And when Veronica put on her dress...she was the most beautiful bride.

At 10:30 the bride was walking down the aisle to her handsome groom. They exchanged beautiful vows, the bride even threw in a "heck ya!"

The reception had lots of dancing, good food (brunch!) and fantastic people. I can not wait to see the professional pictures...Veronica and Pete are a beautiful couple. And, if I do say so myself, the wedding party was pretty good lookin' too!

Congratulations Veronica and Pete! I love you both!

Miley has been so well behaved lately. She's been going on 3-mile runs with Danny, which wears her out! Makes me happy to have such a good puppy!

Danny's on his extreme diet and I'm PMSing. We've been pretty cranky...but I was so giddy to have a peanut butter milkshake from Cookout last night!

I am so grateful for amazing friends. I was stressing all week about leaving Miley in the cage...until Jacque came to the rescue. She is a great friend!

Even though Monday was a holiday, Hubby had duty. I was joyful when I found out Kim's husband had duty too! We took full advantage of this - black bean hummus, brownie sundaes, girl talk and a movie.

I was gleeful to have a lazy Tuesday with Hubby. We watched a whole bunch of movies and cuddled on the couch. Love days like that!

1 can Progresso chicken pot pie soup

1 box Perdue Short Cuts

1 bag mixed veggies

1 can Pillsbury breadsticks

1) Preheat oven to 375 degrees.

2) Combine soup, chicken and veggies in a saucepan over medium heat. Heat through.

3) Pour into a casserole dish. Cover with breadsticks and cook for 18 minutes.

Simple. Simple. Simple.

And so pretty.

The Weekend I Saw a UFO

This weekend was great. I was able to relax, have time to myself, and still spend time with the Hubby and friends. Told you it was great!

Friday night me and Danny had our weekly date night. Hubby's on a diet, so I knew he needed to eat something low-cal. I checked out a few menus and saw that Ruby Tuesday has a a Fit and Trim menu. He had the under 400 calorie BBQ chicken, zucchini and summer squash. I chose something from the Fat and Chunky menu (my loving name for it!) - lobster mac and cheese. Holy portion control. It was such a small portion...made me wish I had Danny's delicious looking meal!

After dinner I swear I saw a UFO. There was a big bright light in the sky - not a plane, not a star. We tried driving towards it, by the time we got there it was gone....and there were atleast five people outside looking up. Creepy! So, of course I took advantage of this situation!

Saturday morning after I sold the fence, Danny and Miley went for a 3 mile jog...and I was able to have some alone time! Then I headed to a cooking class on base with Jennifer, Jordyn (a new bloggy love!) and Megan. It was more of a cooking demonstration with Chef Terry, but it was still a good time. He made orange chicken stir fry with quinoa. We brought home a bunch of yummy recipes that I can't wait to try out!

Later that night me and Danny were headed to the gym - just to find out it closes at 5. Jeez! What a buzz kill. So, instead we drove to our house. The fence is up and the sign out front says "under contract." That sign was so great to see. I can not wait for it to officially be ours!

Sunday morning was freezing. We spent the morning cuddled up watching our favorite show - Mysteries at the Museum. And I was able to have more alone time when Danny and Miley went for another jog! We went to a few flea markets, I was totally willing to spend money...but we couldn't find anything!

While everyone else is enjoying a three day weekend, Hubby has duty which leaves me and Miley having a (long) boring day. I should be doing laundry or even packing...but I think instead it's going to be a lazy movie and junk food day!

Oh wait...someone in this house is on a diet - we only have healthy food. Ordering pizza it is!

Last week I found a great deal on pork tenderloin. I bought it, but I had no idea what I wanted to do with it. So, I looked it up on Pinterest! I found a whole post on healthy pork tenderloin recipes. One really stuck out to me: Hungarian Goulash!

Hubby's on a Diet

I don't think Hubby reads my blog anymore, so it's probably safe to share this story!

December was a great month for eating....not so much for the waistline. I know I've gained a little bit of weight and Danny said he's gained weight. But we thought nothing of it.

Until Danny got a promotion. And had to go to Corporals Course. He had to wear his Alphas...and um, they were snug. Nothing that a trusty needle and thread couldn't fix though.

Monday and Tuesday were fine. And then Wednesday, I got the text. Hubby got kicked out of the class for being overweight.

Now, I know this is no joking matter. But the next text I got seriously made me crack up!

I'm not even going to say how long (or should I say short) he has to lose it. But just know - we're officially in operation starvation mode.

I'm blessed to have such a great husband. He works hard for us and makes sure that we have everything we need....and want.

December was a month full of junk food and no physical activity. My pants were starting to feel a little snug. This week we've been working out and eating healthy (we even had a salad!) We're on our way to looking and feeling incredible again!

Since a move is our (near) future, I'm trying to get rid of stuff that I know we won't be using at our house. I'm feeling productive (and just a little richer!)

Veronica's wedding is next weekend. And I'm elated to say that even though I pigged out in December....my dress still fits!

I'm very happy that today is payday. Not because we need the money...but because I'm a freak and actually enjoy budgeting!

I'm sorry, but you have been driving me nuts lately. Our bad day together starts the minute you wake me up. You eat, you go outside...and I have to watch every single move to make sure you don't dig. Today you were good, you didn't. Then you get a treat, cuz I don't want stinky doggy breath.

Then the maddness begins. You have been awake for literally 10 minutes and you decide to start barking for no reason. You just stand there and bark. Want to play ball? Nope. Tug of war? No thanks. You just like the sound of your voice. I ignore you, you find shoes, towels, pull things off my table, socks from drawers that weren't closed all the way....and I have to chase you to get them, make a friggin' blockade in the kitchen to trap you. You're pleased with your bad behavior...so you decide to take a nap. Man, I wish I could take a nap.

Then you need to go out later. So, I decide we're going to go out together. You look RIGHT at me and start digging. OR the other day you see me vaccuuming and you start digging. REALLY?? You are not that bright. Then you bark at me for 10 more minutes. Just as you start putting your head down, Fedex comes, you freak out. Then the mailman, you freak out again. Just as you start to dose off....someone next door moves to fast and you start barking like a mad woman.

You're being "good" now, but you're going to be a pain after dinner and then when Daddy gets home you're going to freak out. No matter how many times you are shoved down, you still jump. Ignoring you doesn't work. And following Cesar Milan's ways just make me look stupid.

I'm sick of saying your name. I'm sick of having to put everything up so you don't destroy it. You need to freakin' behave. Everyone said you would calm down when you turned 2 years old...well, now I'm counting down the days til you are 3, because 2 didn't make a damn difference.

Miley, you're a pain in my ass. You're lucky I love you.

Top 10: Things to do in Boston

One of the most fun things I did in 2011 was being a tourist in my home state. I went home for 3 months while Danny was in Yuma....and my good friend Betty (Mrs. Gambizzle to all of you!) tagged along! These are the Top 10 things I recommend every tourist do while they are in Boston!

1. Drink a Scorpion Bowl at Hong Kong

Now, I'm sure you're asking yourself "what the heck is a scorpion bowl?" All you need to know is it's a bowl full of deliciousness! They are served at Chinese restaurants...and this hole in the wall bar near Faneuil Hall. Share a huge bowl with your friends and laugh your butts off at people singing karaoke. It's a great way to start a night out!

2. See a Cover Band

Boston has a great music scene. And there is something for everyone! My favorite cover band is Spike the Punch. They sing oldies, new songs...and they make sure everyone has fun. Wear comfy shoes because you will be dancing! And, if you can, see them at Hennessys...my favorite bar in the city!

3. Visit the USS Constitution

This is the first stop on the Freedom Trail (which I also recommend you should do!) You can visit the museum and tour the ship for free. There is so much to see and so much to learn in this small museum. When you leave the museum, look across the street. That's the first Marine barracks! If you're lucky (like we were!) you will be able to tour it!

4. Eat a Canoli at Mike's Pastry

This is something you just have to do when visiting Boston. Mike's Pastry is in the North End and usually very crowded. Make sure you know what you want (which is a canoli!) when you walk in, there's always a crowd and everyone is always in a rush (welcome to Boston!) This is a great pit stop when you are walking on the Freedom Trail. You'll thank me later.

5. Drink a Sam at the Sam Adams Brewery

So, it's hard to get here. Ride the orange line (sketchy!) to pretty much the end. And then walk through a super sketchy neighborhood...and then you are in heaven! Free beer tour, free beer tasting, and if you're extra adventurous you can walk a few more miles to the first bar Sam was served at....just to get a free glass. Take my word for it, worth it!

6. Walk Yawkey Way

Or, even better, see a Red Sox game! If there are no games, tour Fenway Park. I've done both, but this time...it was down pouring and the park was closed. So, we walked the perimeter looking at all the history, going in shops, oh...and drinking beer at Game On!

7. Walk the Freedom Trail

The Freedom Trail is a 2.5 mile walking tour of history. You follow the red line around town and take in all the sites. Along the way you see the Old North Church, North End, Dog Tag Garden, Faneuil Hall, Downtown Crossing...and SO much more. Wear comfy shoes! I didn't...and regretted it later that night.

8. Comedy Connection

The comedy club used to be tiny. The first time I saw Dane Cook I could reach out and touch him. Now, it's housed in a much bigger place. Big names, local people, they are all funny. I've only been to the big theater once and it was to see Wayne Brady. Absolutely hilarious! If he's on tour in your area I highly recommend seeing him!

9. Fire and Ice

One of my favorite restaurants in Boston. The downfall - expensive. But it's all you can eat, so it makes up for it! It's a bigger and better version of a Mongolian Grill. Think - giant stir fry! And they do a breakfast buffet, the pancakes are the size of your plate!

10. Museums

There are a ton of awesome museums in Boston. Me and Betty skipped these but we should have gone to the aquarium and the Museum of Science. They are mostly geared towards kids, but if you have never been before you can get lost for hours!

(Can you tell I'm feeling nostalgic? That only means one thing...I'm ready for a trip home!)

Planning for a Home!

We did it! We made an offer on a house, and it was accepted!

We are just waiting for a few more things to fall into place and hopefully ~~soon~~ it will be ours. I'm refusing to get too excited, just in case. And I don't want it to happen too soon because our lease doesn't end until March 31.

Even though I'm trying to keep my excitement level to a minimum....I'm still mentally decorating it!

First! The living room!

I'm pretty excited about this kitty cornered fire place! I'm not sure if I want the TV on top, because I have so many decorating ideas swimming through my mind. Also, I still really love our entertainment stand, I refuse to part with it.

I know I want a gallery wall. Something like this!

Next! Kitchen and dining room!

I'm very excited about how wide open these rooms are. Right now, our living room and kitchen are separated and boxy...I really love the way this house is set up! Our cabinets are darker than the picture, and our table is much lighter. I plan to have some fun with sandpaper and paint! Oh, and I'm loving the bar area. On my wish list: bar stools!

I will be doing this to the cabinets under the sink. I always hate how messy it gets under there!

You know what else I'm loving about this house? The huge fenced in backyard, the walk in closet, two bathrooms, Kaleb's own room, two car garage and a covered porch! Also on the wish list: rocking chairs.

Oh, I lied.
I'm SO excited!

I'm sorry I have neglected you!

As you know, the computer broke on Thanksgiving...thanks to a super nasty virus. I tried to fix it, but well, my degree in History doesn't really help in that department. Since then we have been computer free. I blogged from my phone, which resulted in ugly formats and poor blogging. Oh, and to do my 2011 review it took TWO days from the iPhone! Needless to say, blogging has been very frustrating!

The plan was to only use the USO computers. That's where I spent an hour this morning....uploading 30 pictures. Holy smokes that is slow. And, since you know me so well, I am not patient!! I enlisted the help of my uber smart cousin and he helped me and the Hubby pick out a new computer.

I swore up and down we weren't going to buy a computer right away. But I couldn't pass up this deal! So, we are owners of a new laptop. And this time....we will not murder it!

So, dear blog...and blog readers...I'm back! I've missed my religious blogging and reading all of your blogs! I'll be commenting again and, of course, finding new bloggy loves!

Surprise! Happy New Year!

I woke up to the most fabulous surprise on New Years Eve! My Dad called and asked if the mailman delivered a package. I went to the front door to check...and there were Mom and Dad! I was SO surprised, everyone was totally in on it and I had NO idea!

We celebrated the New Year with my family (and wishing my sister could have been there) and new friends. We went to Mike's Farm for a Christmas light display, which wad fabulous! And had a yummy dinner at Marrakesh.

Last year I made 11 Goals for 2011. I failed some and accomplished others (like driving, sleeping more and taking vitamins.)

This year I'm attempting 12 Goals for 2012. That's one goal for every month!

1. Buy a house
2. Get my license
3. Have one month of no eating out
4. Make more time for family
5. Get a job
6. Increase our savings account
7. Keep the house clean, not just acceptable!
8. Try something new
9. Bring Miley for more walks
10. Go to the gym
11. Plant a SUCCESSFUL garden!
12. Go to DC with my Hubby

Pizza Pizza Casserole!

Last night for dinner we had the pizza casserole that everyone seems to have pinned.

Cheese, pasta, sauce...pepperoni. Um, yes please!

And was it as good as it looks? YES! Thank goodness there are a tons of leftovers, now we don't have to fight over it for lunch!

11: Favorite Movie You Watched

Crazy Stupid Love. The movie was decent and when everything came together in the end it was HILARIOUS! Me, Danny and Lindsey instantly granted it "best movie ever" status!

10: Favorite TV Series

Me and Danny were a little late to this party, but we LOVE The Office. We watched the entire series on Netflix in just a few weeks...I already can't wait for the latest season to be available on there!

9: Favorite Restaurant

After two years of living down here I finally found a place that I love - The Marina Cafe. Their regular menu isn't too impressive but over the summer they host a pig roast every weekend. And the atmosphere is FABULOUS! Very relaxed and comfortable. I already can't wait for summer date nights there!

8: Favorite New Thing You Tried

Zip Lining! We went to Asheville for Danny's birthday and I surprised him with a day of zip lining. For being afraid of heights I REALLY enjoyed doing this!

7: Favorite Gift You Got

Danny TOTALLY surprised me this Christmas. I've been saying forever that I wanted a hanging pot rack, but I never imagined that Danny would remember that...and get one for me! I was so surprised, and can not wait to hang it up!

6: Favorite Thing You Pinned

I've pinned a lot, but have only completed meals and outfits. But my FAVORITE is probably all the outfits that involved my mustard cardigan!

I blog A LOT. But the first post that came to mind was the post I did on ball gowns....and what is NOT appropriate!

4: Best Accomplishment

This might not seem like much to any other 26 year old...but I FINALLY got my permit and have been driving. I'm no longer (deathly) afraid of it. Note: I still don't love it!

A New Adventure!

Now that Christmas is over we need to start thinking about the next year. And we have a BIG adventure to start thinking about: BUYING A HOUSE!

Yesterday was our first day house hunting. We brought Kaleb along with us...which could have been a really bad idea or a great idea. Turns out it was a great idea...I think we have a budding real estate agent on our hands!

We are looking for a three bedroom, two bath house...with an amazing kitchen. We are pretty secure with our price limit, which I (thought I) made clear to our agent.

The first house we looked at was custom built for a client who ended up not being able to buy it. There were tons of PROS for this house...but also a few CONS. The pros for this house was the AMAZING kitchen with bar and built in desk. The main bedroom has a huge walk in closet and bathroom. It's on 1.5 acres. The cons are...it's in Hubert, which is pretty far from base, it's located on a main road, which I'm not a fan of, the living room is small and had no true mantle on top of the fire place...the TV would HAVE to go there. Oh, and it was about $20,000 out of our price range. Way to get my hopes up!

Before we visited the next house Danny made it clear that we wanted something in our budget. So when we pulled up to the next house I was pretty excited. It's in Richlands, closer to base, loved the kitchen, screened in porch, fenced in backyard and FABULOUS bonus room upstairs with built in bookshelves. Turns out it was $29,000 out of our budget. If money was no object THIS is the house I would want!

She then showed us one under our budget that we didn't like at all and then another version of my dream house. I was starting to think I would have to redo our budget...

The last house we looked at (also in Richlands) was right at our budget. The kitchen is a little smaller than I would like, but has a great bar. The living room has a gorgeous kitty-cornered fireplace, bedroom has a great walk in closet, and 2 car garage (and I love the door!) I left thinking that THIS was going to be our home!

We are waiting to hear back from our credit repair person (again.) I'm not going to get too excited about this house until I know there is a real chance of us getting it. I'd hate to be disappointed!

Christmas!

I hope everyone had a very Merry Christmas! This was our first Christmas playing Santa and we were VERY excited! And maybe just a tad bit nervous that Santa was going to be caught!

We woke up to tons of presents under the tree! And Kaleb's stocking was almost as tall as him! He got so many toys and clothes...and a pair of rollerblades from Miley!

Me and Danny also had a great Christmas! I was spoiled with a couple Pandora charms, clothes, a weather station and a hanging rack for my pots! Danny got new running sneakers, sun glasses, clothes and tools!

After a yummy homemade breakfast we FaceTimed with my family, which was awesome! Then we made our way to Raleigh with the in-laws...for even more presents! I'm pretty sure I have the entire Pampered Chef collection and Danny has a new gun cabinet.

Dinner was yummy...and there was lots of it! It was a very relaxing and fun day with the in-laws! Miley even had fun with their new puppy, Kayla!

This was my first Christmas away from home. It was different and will take some getting used to...next year we will definitely be going to Boston! I know it was different for my family too...instead of a big dinner they had CHINESE FOOD!

I'm very thankful that we were able to spend Christmas with Kaleb...and I hope it's the first of many holidays with him!

It's Beginning to Look a Lot Like Christmas!

Minus the snow! Which I would never complain about. One thing I DO NOT miss about New England is the snow! BUT it has been chilly out. Last week it was still in the 70's...and it was 28 degrees when I woke up yesterday! BRR!

Thankfully we don't need snow for it to be Christmas. Our house is decorated for the big day...and it's getting me REALLY excited!

We have presents under the tree (and Santa hasn't even visited yet!) the stockings are hung, and our Christmas card collection grows everyday!

And I'm sure you're wondering what our Christmas cards looks like! I love the way they came out!

Debbie and Nancy

Around the holidays I don't like when Debbie and Nancy show up. Debbie and Nancy live in all of us. You also know them as Debbie Downer and Negative Nancy. They have been showing up more and more often around these neck of the woods.

Let's talk about Debbie first. She's a worrier and a nervous person. If she's not worrying about one thing, it's another..and if there's nothing to worry about..she'll find something. Once the wheels get spinning, problems that didn't exist a minute ago are now HUGE life changing issues.

Nancy is a complainer and always has something negative to say. She hates her apartment, her annoying neighbors, when her dog barks for no reason, and boring weekends. And she makes sure you know about it.

Like most toxic friends, I need to get rid of these two people. They are depressing and I don't like being around them.

It'll be hard, but I need to start focusing on the positive. I need to stop complaining. I know problems aren't just going to disappear, but I also know complaining about them won't make the problem go away faster. I need to focus on the here and now...and not (so much!) on what I can't control.

2012 is right around the corner...here's to making it a much more positive year!

The holidays should be a joyous occasion, spent with family and friends, with lots of love and laughter. Sometimes though, things get in the way. Our holidays turn out a bit different than we’d expected or hoped. This is often the case when the military is involved.

My husband and I were lucky to spend the holiday season with each other for the first three years we were together. Then, in the fall of 2009, he deployed for the third time. We got lucky! It was only scheduled be a 60-day deployment and he was slotted to be home more than a week before Christmas. Rarely do things go as planned though and Mr. Murphy always seems to strike at the worst times.

My heart was heavy that year as I put out the Christmas decorations and set up the tree alone. The holiday season just wasn’t as cheerful with my husband in a war zone, so far away from home. The day after he was scheduled to start his journey home, I received a phone call. Due to poor planning, the plane that would bring them back to America wouldn’t be available for several more days. They were out of the war zone, in a “safer” county, but their return date was now uncertain. We had almost two weeks to work with, so I wasn’t too worried. He would still make it home for Christmas right?

Each day came and with it, another phone call, another delay. My hopes began to drop and my heart grew heavier with each passing day that brought us closer to a Christmas spent apart. Then, two days before Christmas, I got the call that they were on their way! He would arrive on Christmas morning. I had spent the days leading up to Christmas at my parent’s house, an hour and a half away from our home and from the base. I drove home on Christmas Eve and spent the night alone, praying that they would make it home safely tomorrow. All I wanted for Christmas was my husband.

I woke up bright and early Christmas morning to severe flooding and torrential rain. Even this couldn’t keep me down. I drove to the base and waited with the other friends and families. Several of our friends came out to support us, showing me that even on Christmas day, love and friendship matter the most. Due to the flooding, they were later than expected, but he made it. He walked through the door around 10am and I couldn’t have been happier. I had received my Christmas wish. We spent the rest of the weekend with family and friends, enjoying each other’s company. What was supposed to be a 60-day deployment turned into 74 days. I know it could have been much worse and I was, and still am, extremely thankful that we were able to spend Christmas day together.

This year and last, the military has again changed how we have spent the holiday season. My husband was TDY for two weeks over Thanksgiving last year. While he was swimming with whale sharks in 85-degree weather, I was sharing a meal with friends while it snowed outside.

While we are so happy to be living in Europe, Christmas is now spent away from family and friends back home. The holiday season is quite different when experienced outside of the United States. I am very blessed to have him here this year and I’ve already received my Christmas wish. My husband will be here with me, we have a beautiful, healthy child and we are all together. That’s all that really matters.

I hope each and every one of you finds joy, love and laughter this holiday season. For those of you who will be spending it away from family and friends, I hope you find some way to connect to those you love.

Cookie Swap Fun!

They were all so yummy! We had Laura Bush's cowboy cookies, chocolate chip, some sort of amazing graham cracker toffee and so many more! And Hubby was so happy with all the snacks in the house!

I had so much fun getting together with a bunch of girls for the night! And totally amazed that I've been able to have a girls night three times in a week! I could get used to this!

Cookie Swap Recipe

I've never been invited to a cookie swap, so when I recieved an invite from Jen I said "yes" right away! The thought of making one type of cookie and bringing home many tupes seemed so exciting to me! Don't get me wrong, I love baking....but I'm such a slob! One mess is better than seven!

I decided to make my Mom's scones, which aren't really scones afterall! They are rugelach. And they are AMAZING!

Ingredients

2 cups all-purpose flour
1/4 teaspoon salt
1 cup unsalted butter
1 (8 ounce) package cream cheese
1/3 cup sour cream
1/2 cup white sugar
1 tablespoon ground cinnamon
1 cup finely chopped walnuts

Directions

1.Cut cold butter or margarine and cream cheese into bits. In food processor pulse flour, salt, butter or margarine, cream cheese and sour cream until crumbly.

2.Shape crumbly mixture into four equal disks. Wrap each disk and chill 2 hours or up to 2 days.

3.Roll each disk into a 9-inch round, keeping other disks chilled until ready to roll them.

4.Combine sugar, cinnamon, chopped walnuts.

5.Roll each disk into a 9 inch round keeping other disks chilled until ready to roll them. Sprinkle round with sugar/nut mixture. Press lightly into dough. With chefs knife or pizza cutter, cut each round into 12 wedges. Roll wedges from wide to narrow, you will end up with point on outside of cookie. Place on ungreased baking sheets and chill 20 minutes before baking. (I line cookie sheet with parchment paper for easier clean up).

6.Preheat oven to 350 degrees.

7.After scones are chilled, bake them in the center rack of your oven 22 minutes until lightly golden. Cool on wire racks. Store in airtight containers...they freeze very well.

Girls Night at Duplin Winery

Being a member at your favorite local winery has it's perks - huge discounts, special invitations, and girls night! We went to one over the summer, so when I got the invite for another one....we jumped at the chance!

We were greeted with huge gift bags and the usual friendly faces that you always see at Duplin. They had some light snacks including delicious pastries, cheese and cucumbers with dip. Oh, and wine! I drank "Just Naughty," Duplin's newest Christmas wine. Did I mention this was all free of charge!?

Birthday Weekend!

I turned 26 on Thursday. And the day was even better because Hubby was promoted and my friend Lindsey came down for a long weekend! And we made sure we celebrated ALL weekend! (My waistline is showing the side effects!)

Lindsey arrived Thursday. We celebrated with lots of girl talk, lunch...and later drinks with Danny.

The fun REALLY started on Friday. The morning started with delicious cappuccinos....and ended with North Carolina Girls Pint Out's BEERmas. This event was held in Durham...scary, scary Durham! Luckily the bar was fun and full of amazing girls. We drank sweet potato beer and won a few raffles! It was so much fun to have a night out!

On our way home Saturday we witnessed a pretty awful motorcycle accident. Luckily the guy lived and hopefully learned his lesson to not drove like a jackass. We relaxed all day Saturday and then went to a local bar with Jen and Dustin. It was a fun, and interesting, night out. I sipped on water while everyone else drank very watered down drinks.

Lindsey and I spent our Sunday watching OWN's marathon about fat people. When it was over we enjoyed Cookout milkshakes. By the end of this weekend we could probably start our own fat show!

This morning I saw Lindsey off and enjoyed some Starbucks with Jacque. I had such a great birthday weekend and am so happy I got to share it with my amazing husband and a great friend!

On a side note - I'm hoping to get to get to the USO to use the computers and do a REAL blog update! Until then, here are some pictures to hold you over!

Hot Potato, Hot Potato!

I haven't blogged in almost a week...having no computer will do that to ya! But you know what I have been doing? Using the Pinterest app to find and make delicious food!

One of the most simple and delicious meals I've made is potato soup in a crockpot. I usually don't use my crockpot....but this meal sounded too good to be true!

Fun Filled Weekend!

This weekend was the kind of weekend I like...long and busy! Danny got out early on Wednesday and didn't have to be back until this morning. Don't you wish all weekends were that long!?

After Thanksgiving we started our fun! Friday I cleaned the house and got rid of all memories of autumn...and decorated for Christmas! I'm usually not so excited for Christmas, but it's going to be a lot of fun to have Kaleb here this year! AND I did all my wrapping!

Friday night we went to Swansboro for the Christmas Flotilla, which is basically a parade in the water. I had such a hard time taking pictures of the bright lights, but it was so gorgeous! It was the perfect night, complete with a beautiful sunset.

Saturday we drove to Burgaw for our 10th winery - Bannerman Vineyard. I was so excited to try new wine...but I was so let down. I couldn't find one wine that I enjoyed, Danny got lucky and liked a few. The strangest? Ginger wine. The best part of the trip was finding a hidden antique store and going through a bunch of treasures!

On the way home we decided to get out Christmas tree! The earliest I have EVER got one. It looks awesome all decorated and with presents already under it!

Sunday was, of course, a lazy day. Hubby watched football and played video games all day. As much as I hate those two things, Sunday's really are perfect around here!

And in case you were wondering! I've been driving A LOT lately! Be proud!

It drives me crazy that I can't put the photos where they belong in the post, there's only so much I can do with my iPhone!

I Love a Good Dog!

As in hot dogs! And even more specifically....chili cheese dogs. What's better than a hot dog, smothered in chili and topped with delicious melted cheese? Oh, that's right....nothing!

This recipe was easy and super filling. We will definetly be making these yummy dogs again! I love that the condiments were already on when it came out of the oven....that way I could dig right in!

Thanksgiving!

I hope everyone had a fabulous Thanksgiving! This year, instead of traveling to Ohio, we decided to stay local. And since it was just the two of us I didn't want to make a HUGE meal. So what did we do?

We spent our Thanksgiving at the Jacksonville USO. I'll be honest, I was a little skeptical of the idea - would the food be good? Is it weird spending Thanksgiving at a place like this?

But I was proven wrong! The food was so good....and there was SO much of it! Turkey, stuffing, potatoes, yams, corn, cranberry sauce...and lots and lots of pumpkin pie. The only thing that would have made it better was wine! And, yes, I asked if I could bring some!

The only bad thing about going out for Thanksgiving dinner? No leftovers! So I cooked up some chicken and stuffing for a small snack later. Not as good, but it hit the spot!

I got to FaceTime with the family. Me and Danny were home drinking wine why my family was in Massachusetts drinking cocktails. It's kinda like we were together!

I really missed Mom's stuffing. Think UPS would mind bringing some to me?

I hope everyone had a great Thanksgiving! And if you're takin part in Black Friday...don't be too crazy and I hope you get a ton of great deals!

My Top 5 Favorite things about Thanksgiving!

1. Food

You don't even need to make a turkey for me, I love sides. Stuffing is my favorite, Mom's stuffing is my favorite favorite. In my eyes, turkey is only good for one thing. Leftover sandwiches. Mmmmm

2. Thanksgiving Night Movie

Growing up we always went to a movie Thanksgiving night. Me and Danny have been able to continue that tradition with Kaleb. This year me and Danny will be going solo, but we'll still be going! Now we just need to decide on the movie!

3. Family

I've only missed one Thanksgiving with my family or Danny's family...and that's when I went to Ireland. I love getting to spend time with family, during a no-stress holiday. This will be our first Thanksgiving just us, thank goodness for FaceTime!

4. Macy's Thanksgiving Day Parade

I actually like watching the parade! It's more background noise than something I sit in front of, but it's always fun to see the giant floats, celebrities, and people along the route having fun.

5. Almost Christmas!

Yep, after Thanksgiving it's officially time to decorate for Christmas, watch holiday movies, listen to Christmas music....and finally have some Starbucks holiday drinks!

I love saving money. But I also love Starbucks. It's like a huge conflict of interest! Starbucks is so freaking expensive. I had a $15 Starbucks GC, and was only able to get 3 drinks! Talk about sad. So, when I ran across Salted Caramel Mocha recipe I just had to make it mine!

Okay, so I decided on a whim that I wanted to make this. Meaning, I had no sugar....or whipping cream. What's a girl to do?! Improvise! I attempted to caramelize some Splenda and skim milk. What a joke, it was so thin. But tasted exactly the same. It was freakin' delicious. It's bad that I know how to make it...I want it all the time now! Watch out waistline!!

When you look above this post and see the link for "My Friends Blog Too" it's more than just a list of blogs I like. Those are bloggers that I have met in real life. Yes, as of today, I have met sixteen bloggers.

On the list are people I have become really close to. And the military life comes with a lot of "see ya laters." I've had to give more "see ya later" hugs in the past two years than any other time in my (almost) 26 years.

This week I had my last lunch date with my bestie, Katie, before she leaves for Oklahoma. Katie was the first blogger I met, and my first friend in Jacksonville. I helped Katie movie into her house, "lived" with her for a while....and I was even in Katie's wedding! It's hard to believe that our friendship started with our blogs.

Today I met my sixteenth blogger, Kim from Our Navy Nest. We celebrated BOGO at Starbucks and bonded over all things New England. I don't have pictures to prove it...but that just means we need to hangout again!

I just want to thank each and every blogger I have met for being an amazing friend, a shoulder to lean on, and helping me make amazing memories.

Danny hates when I start a sentence with "what if....?" And more often than not, that's how my sentences start. Hey, I'm a curious girl! So this little blog meme is perfect for me...and other curious bloggers!

What if I were to get pregnant?

I'd be excited...and nervous, and worried, and all the other emotions I generally feel. But more excited.

What if I could have any job in the universe?

You know Andrew Zimmerman and Adam Richman? Well, I'd love to get paid to travel and eat!

What if I had the day to myself?

With no dog? I'd wake up when I want to. Call Starbucks and have them deliver something to me (this is a dream world, right?!) I'd take a really long, hot shower. Watch a few tearjerkers on Lifetime. Make an incredible lunch and eat in the living room and not have to worry about the dog being curious. And then after enough relaxing I would get off my lazy butt and clean the spare bedroom....with no interruptions.

What if I could get married all over again?

I'd only change one thing - I'd make sure I got to enjoy cocktail hour. We had mimosas, bloody marys and an amazing cheese tray. I wish I got to eat it!! But it was an amazing day...I wouldn't change anything else!

What if I could live anywhere in the US?

This is a real life problem right now! We're stuck between North Carolina and Massachusetts. Perks and downfalls of both.

What if you could have any talent in the world?

One that would make me lots of money!

I have no clue what I would go for. Maybe a Masters in Education?

I've met quite a few celebs. I've met Kenny Chesney, most of the One Tree Hill cast, lots of bands that most people don't know. It's not really that exciting. I never know what to say, everyone is awkward, I usually just get my picture or autograph and leave.

What if I could shop at one store for the rest of my life?

Probably Forever 21. But if money still isn't an object...Urban Outfitters.

What if I could choose any pet?

A dog that listens. Seriously, I love Miley. But her listening skills are declining.

What if I could go on a trip right now?
A cruise with my Hubby! Or Disney. Or the islands. Or back to Ireland. SO many choices!

What if I had to choose between a house cleaner and professional chef?

If it's just for a day....I'd choose the chef. One day of a professional chef would be amazing. But if it were forever...I'd choose the cleaner. Then I could cook and bake all I wanted and not have to clean up the mess!

What if I had the option to get plastic surgery?

I'd pass. There's nothing that I would want to change about myself.

Taco Bowls!

So, you all know I like Jacksonville. But there are few things that I can not stand about good 'ol Jville. On the top of the list is that it doesn't have a Chipotle or Qdoba....or any place nearby. Seriously, I miss those giant delicious burritos. Mmm and that queso.

When I ran across the Taco Chicken Bowl pin, I knew I needed to make it. It reminds me of the naked burritos at Qdoba! I changed up the recipe a bit - I didn't use a slow cooker. I shredded a rotisserie chicken and just combined everything in a pot. Yes, I'm probably the only person on the planet that hates a slow cooker!

236th USMC Birthday Ball

Thursday night we celebrated the United States Marine Corps' 236th birthday. We got all dressed up and celebrated with some amazing Marines.

Before we made the two hour trek to Myrtle Beach, we stopped at Mrs. P's house so I could get all dolled up. I always feel dressed up when my hair and makeup is done...and she did such a fabulous job!

We checked into our hotel room and got all dressed up! If I do say so myself, we are a mighty fine couple!

Our first stop was cocktail hour and professional pictures. We mingled with some friends. I wanted it to be a wine night, but at $5 a pop (plastic cup!) I opted for the free bud light. Soon we were called into the ball room and took our seats for the ceremony. We watched the commandants message and cut the cake for the oldest and youngest Marines. I was a little surprised when I heard the oldest Marine in attendance was born in 1963, that seems so young. And the youngest in 1992 (....and now I feel ancient!)

Then it was time to eat! We had steak, potatoes and veggies. It was very yummy and everyone ate everything...and more. One of the guys at our table jokingly said it wasn't very good, so they brought him another dinner. Danny said he'd like another too. I never thought they would bring him another one....but they did! Way too funny!

After dinner the dance floor opened up. Leave it to my Hubby to request Cupids Shuffle. And for the second year in a row, SgtMaj danced with us. That's always the highlight of my night!

After some dancing we took some group pictures. My favorite is of me and the guys!

We had so much fun at this years ball. I saw some pretty risque dresses this year - lots of side boob and legs. And a tutu. Why did I not get a picture of that?!

I am so proud to be part of the Marine family. I am so proud to call these guys my friends, and even more proud of my husband. And, as always, Marines really do know how to throw a great party!

Due to lack of storage room, we had to pass on an amazing deal on a fence. I wish we had a house now so we could get the fence!

Speaking of "storage" our spare room is a disaster. There's officially so much stuff in there that organization is impossible. And it needs to be clean in 3 weeks. EEK!

Miley has a vet appointment today. Time to empty out my pockets...these trips are always so expensive.

We finally found a great Chinese food place!! Last weekend I had the best crab rangoon and lo mein I've had in a long time!

I've been catching up with my friend, Natosha. I'm not even sure why we stopped our daily walks and hangouts...but we've been chatting and hangout, which is great!

Our grocery bills have been so small lately. A maximum of $60? I'll take it!

Book Review: Heaven is for Real

A few weeks ago I got a package in the mail from my Mom. She sent some coupons and goodies, and this book - Heaven is for Real. She said it took her four hours to read. So, during one super boring football Sunday I grabbed the book...

Heaven is for Real is the story of Colton Burpo told by his father, Todd. At four years old Colton had emergency surgery. After surgery Colton begins talking about watching his father worry about him in a different room....and his adventure in heaven.

In heaven Colton meets his sister, that his parents didn't tell him about...and his great-grandfather who died long before Colton was even born. He begins to tell his family about the thrones, the Holy Spirit, and even what Jesus looks like.

Of course, I cried during this book. There was a touching scene where Colton and his dad visited a dying man and Colton says "it's okay, the first person you'll see is Jesus." Yep, bawled like a baby. It's so easy to believe what Colton is saying, when a child experiences these things...how could you not believe.

By the time you are done reading this book, you will believe. I highly recommend this book. You will not regret reading it.

On My Christmas List

Less than 7 weeks to go until the big day! And we are almost done with our shopping! We've had so much fun shopping for Kaleb, he's going to have a kick-ass stocking! And let's be serious, the stocking was always my favorite part of Christmas. I'm really going to miss opening my stocking next to my sister this year. Add it to the list of reasons why I wish we were going home for Christmas.

This won't be able to fit into a stocking, but it's some stuff that I would really like. I need some new baking stuff. And I'm not talking anything fancy....just a cooling rack and some cookie sheets! Seriously, those things would make me a happy girl!

And guess what? Amazon has some great deals!

Searching for the Perfect Home!

For a while now we have been going back and forth on where we want to live. Hubby still has two years left in the Marines, and we've decided reenlistment probably will not be happening. So, we need to start planning our future. The biggest question that comes up is "where the heck are we going to live." And boy oh boy, do we have options.

Danny is originally from Ohio. But, it's not an option for us. I've spent little time in Ohio and wasn't a fan....and besides Kaleb, Danny says there is nothing in Ohio. Then there is Massachusetts. Ideally, we would love to move there. But looking at housing costs, budget and tons of other factors....it's probably not in the cards for now. So, that leaves us with North Carolina. Which is great, because we both love it down here! It's close enough to both our families that we could drive if needed and the flights are cheap. And the cost of houses is incredible compared to Massachusetts.

We officially began our search for a home on Friday. We met with a lender and a realtor. We, of course, qualify for a VA loan. We're in the process of taking care of some credit things (if you need help with your credit, I can recommend a great repair person!) and then will be on our way to finding our perfect house!

Our lease isn't up until March, which is around the time some perfect houses will be finished. I've been searching online, found a few houses that I love and that are within our budget. Our realtor says she can already tell what my style is, which is great!

I can't even begin to tell you how excited I am for this process! Let's not lie, I'm totally nervous about it too. And....of course, I'm pinning home ideas like crazy! Here are some things I'm loving!

I don't want to buy a new kitchen set. So, I might be daring and paint our chairs. Our other idea is to stain everything if we get a kitchen with dark cabinets!

I love this idea of hanging pictures from a curtain rod. I even have a table that would look great under it!

I love love love this wall.

I love this organized laundry room....with a makeshift table on top of the washer and dryer!

And, of course, something pretty for the front door!
